Waffle Cone
1/2 cup granulated sugar
2/3 cup flour
1 tbsp melted butter
1 egg + 1 egg white
1/4 tsp salt
Beat egg and egg white to incorporate. Add sugar and salt, blend thoroughly. Add flour slowly while beating to incorporate evening. Mix in butter. Scoop approximately 3 tbsp of the mixture into a pre-heated wafflecone iron and cook for about 90 seconds. Remove from iron and form by putting into a bowl before the cone cools.
Ice Cream
1 cup milk
1 cup cream
1/2 cup granulated sugar
1 tsp vanilla
1 egg yolk
1 tbsp instant coffee grounds
2 tbsp toasted crushed almonds
Mix milk, sugar, and vanilla in sauce pan over medium high heat. Mix in coffee grounds, whisk thoroughly and allow to simmer. Add some of the heated mixture to the egg yolk to temper, then add egg to mixture in sauce pan. Chill in refrigerator for one hour. Add cream and mix. Add mixture to ice-cream maker and mix according to manufacturer directions. When ice cream has thickened, add in almonds, mix for 30 seconds, and remove ice cream. When removing ice cream from maker, alternate layers of ice cream and fudge sauce to create the swirling effect.
Hot Fudge Sauce
3 tbsp cocoa
1/2 cup granulated sugar
1/3 cup evaporated milk
1 tbsp butter
1 tsp vanilla
Mix all ingredients in sauce pan as butter melts over medium heat. Once it begins to boil, cook for another two minutes. Chill until it thickens.
Caramel Sauce
1 cup granulated sugar
6 tbsp butter
1/2 cup cream
Melt sugar and butter over medium heat until all sugar has melted and mixture turns to a caramel color, approximately 10-15 minutes. Once all sugar crystals have melted, add cream. Mixture will foam up significantly. Once cream is incorporated, remove from heat and chill.
Whipped Cream
1/2 cup cream
1/8 cup granulated sugar
1 tsp vanilla
Mix all ingredients in a large bowl and beat until thickened.
Main Street Mocha Sundae
Scoop ice cream into waffle bowl. Top with hot fudge sauce and caramel sauce, whipped cream, and a cherry.
